Supervisors of Scotts Supermarkets’ cheese and deli counters have attended an intensive training course at the Consorzio Ricerca Filira Lattiero Casearia in Ragusa.

The course, part of the EU programme T-Cheesimal focused on traditional Sicilian and Maltese cheeses and their characteristics, potential evaluation criteria, production methods, cheese-cutting techniques, nutritional values, cheese sensory characteristics and classifications.

The cheeses evaluated included ricotta vaccina, Ragusano DOP, Pecorino Siciliano DOP and Maltese gbejniet.

Scotts managing director Mario Said, who led the group with consultant John O’Dea, was pleased that through the delegation’s input the Maltese gbejna will eventually gain DOP classification.

“The knowledge gained during these training sessions is not only important for our teams to be better structured, but is also valuable to enhancing our customer service levels,” Mr Said added.

The course is one in a series made possible through the close cooperation between Scotts Supermarkets and Conad Sicilia, the Italian supermarket chain.
