(Serves 2 to 4)

500 to 750 g whole fresh prawns
Cloves of garlic to taste, peeled
Gozo sea salt
Freshly ground black pepper
2 tablespoons extra virgin olive oil
Fino to taste
Shredded mint leaves

Rinse the prawns, shake them dry, and discard any loose heads. Crush the garlic with a little coarse sea salt, and put it in a frying pan with the olive oil. Heat it, and stir in the prawns. Cook them for eight to 10 minutes, depending on size, adding the pepper and fino after a minute or so, and then letting it cook on a high heat. Just before serving, stir in the shredded mint and serve with Maltese bread and a glass of chilled fino.
