It has been claimed that, once the interconnector with Sicily starts functioning, Malta could purchase electricity even at 3c a unit at night.

If this is true, then we must focus on hydroelectric plants. A good number of quarries are situated a few metres away from the coastline, so seawater can be pumped at night, generating electricity during peak times.

This system is already in use in many countries with water pumped from rivers.
