Grilled Sausage Bread Rolls
Ingredients
1 regular size package smoked sausage
1 red or orange bell pepper, halved, seeded (or use 1/2 each of each color)
4 (1/2-inch thick) slices large red onion
1/4 cup bottled spicy barbecue sauce
4 French bread rolls, split
Preparation
Grilled bell peppers and smoked sausage brushed with spicy barbecue sauce make for a filling and delicious sandwich. Oil grate and prepare barbecue grill. Cut each sausage link in half crosswise.
Grill sausage and vegetables on covered grill over medium-high heat for five minutes. Turn; continue grilling covered for five minutes or until sausage is heated through and vegetables are crisp-tender.
Brush barbecue sauce over both sides of sausage and vegetables. Arrange rolls, cut sides down, around edges of grill. Continue grilling covered for two minutes or until rolls are lightly toasted. Cut bell peppers into strips; separate onion slices into rings.
Serve sausage and vegetables in rolls.
Smoked sausage chilli
Ingredients
1 package smoked sausage, cut into bite-sized pieces
2 green bell peppers, chopped
2 tbsp chili powder
2 14.5 oz cans diced tomatoes, undrained
1 cup chunky salsa
2 16 oz cans red beans, rinsed and drained
Garnishes: shredded cheddar cheese, sour cream, chopped cilantro
Preparation
Cook bell peppers in a large saucepan coated with cooking sprayfor two minutes. Stir in chilli powder and cook for a minute. Add tomatoes and salsa; simmer for eight minutes.
Stir sausage into chilli along with beans. Simmer six to eight minutes or until chilli is slightly thickened.
Ladle into shallow bowls; garnish as desired.
Smoked sausage quesadillas
Ingredients
1 package smoked sausage, chopped
8 flour tortillas
1-1/2 cups grated cheddar cheese
1 (4 ounce) can chopped green chilies, undrained
1 cup salsa
Preparation
Cook and stir sausage in a large nonstick skillet over medium heat until browned and heated through, four to five minutes (do not wash skillet).
Divide sausage evenly among tortillas; top with cheese and green chillies.
Fold tortillas in half over filling.
Add half of quesadillas to same skillet; cook over medium heat two to three minutes per side or until browned and cheese has melted.
Repeat with remaining quesadillas; serve with salsa.
