When whole societies dreamt of eating white bread, the Inquisitor in Malta was preparing a fine version - the Pane di Spagna.

This was commonly prepared in sophisticated kitchens in the early modern world and an 18th-century recipe was found in the Maltese archives.

Tomorrow at 7.30pm, individuals can try out this highly sought sweet, prepared through a similar recipe as that of the Inquisitor’s.

Heritage Malta is organising a sensory experience for a limited number of people, with Noel Buttigieg exploring the subject and chef Josef Baldacchino conducting a cook-along session of the 18th-century recipe.

Proceeds will help Heritage Malta upgrade the kitchens at the Inquisitor’s Palace.
