You could eat to your heart’s content in Kirkop tomorrow, provided you like irkotta.

Kirkop local council, in collaboration with Maltese dairy producers, the Culture Permanent Secretariat and the Malta Tourism Authority, will be holding the annual Irkotta fest from 10am onwards.

Sweet and savoury irkotta dishes will rule the day in a festival aiming to raise awareness about the traditional way it is made.

One common misconception about Maltese irkotta is that it is the same as ricotta.

Ricotta is made from re-cooking whey, the by-product of cheese production,meaning it is not technically a cheese.

Maltese irkotta, on the other hand, is made from whole milk heated in the presence of seawater, which is why it is slightly salty.
