The Mediterranean Culinary Academy – which was launched in 2017 and hosted the sell-out pop-up dining event Pollen – is dedicated to the use of sustainable techniques and seasonal ingredients. With this in mind, its courses all relate to cuisines from the Mediterranean region, including Spain, Italy, France and the Arab Levant.

“We have spent the past few months designing these courses in great detail,” says the academy’s founder and CEO Kurt Mifsud.

“Aside from ensuring that every aspect of these courses is achieved through the use of sustainable practices and ingredients, we have also made them hands-on and fun, so participants will be able to learn new skills and recipes under the guidance of our fantastic chef-instructors.”

Students will have six new courses to choose from, all of which will start in the New Year. The courses are: Bread Making, Olive – The Fundamentals of Mediterranean Cooking, Cuisines of Coastal France and Spain, Regional Cuisines of Italy, Cuisines of The Maghreb and Arab Levant, and Cuisines of Greece and Turkey.

“Students will find that every aspect of the course is included in the fee, including all of the food and drink that they will be using. Each lesson will introduce them to new aspects of the course, whether that’s a tasting session, hands-on cooking session or a visit to a local producer where they will experience where their ingredients come from. Everything has been designed to provide holistic knowledge, and the students will complete the course with a plethora of delicious new recipes to make again at home, as well as interesting knowledge and useful skills,” Mr Mifsud adds.

Applications for all of the Mediterranean Culinary Academy’s new courses are open now, and students can book online at https://mcamalta.com . Early bird rates are available until December 24. Further courses will be announced soon.
