As readers very well know, I have been publishing cookery books, especially those related to Maltese dishes, since 1974, when I published my first book, Kċina Maltija (Maltese cuisine). The book has since been reprinted and updated more than six times. It has also been published in four languages more than 12 times.

Our collection of Maltese recipes is very limited. No one knows exactly which recipes are really, truly and originally Maltese. That is the reason why I use the term “popular Maltese recipes”. I am busy preparing a new extensive edition which will be published in the first half of 2011. It will be translated into seven languages.

This edition will mainly be based on a collection of recipes by my grandmother, Ġorġina Dougall. She was a great cook and, since she was a great believer in the slow cooking process, her food was always something very special.

I would like to invite all readers, especially Gozitans, who have some popular Maltese recipes which they would like to share with others, to send them to me. These recipes will be included in the new publication. Together with recipes, any old photos would be appreciated.

Apart from being included in this publication, all the recipes will also be featured on our website: www.tisjir.com. This invitation is also extended to convents and monasteries. Due credit will be given to all contributors.
