Ingredients:
150g ground almonds
90g castor sugar
60g icing sugar
3 egg yolks
1. Mix all the ingredients into a smooth paste
2. Form small shapes with the mix
3. Put on a dish with rice paper or baking paper and brush with egg wash
4. Leave to set over night or for at least 6 hours
5. Bake in a hot oven at 480F (240C) until tinged golden brown in colour
