Ingredients:

400g chicken liver

150g chopped leeks

2 garlic cloves

2 hard boiled eggs

Bay leaves

Sherry

Seasoning

Some butter

1. Melt the butter and lightly fry the leeks and garlic to a light golden colour

2. Add the chicken liver and continue cooking until sealed from outside

3. Add bay leaves, seasoning and sherry

4. Continue cooking in the oven for 30 minutes

5. Remove the bay leaves. Put into a food processor, add eggs and crush into a fine smooth paste

6. Serve cold with toast Melba or Galetti
