Essence restaurant at the Radisson SAS Golden Sands Spa & Resort has set itself new goals with a shift of focus to fish and seafood cuisine and a more relaxed, yet still refined atmosphere.

The combination of superlative seafood in a great setting where one can watch sundown is a perfect match, and is what inspired Essence seafood restaurant. Essence overlooks a wide sweep of bay and open sea.

Dunes cocktail bar is now a natural complement to Essence and has become an integral part of the dining experience. Guests enter Essence through the cocktail lounge where they can have aperitifs and light accompaniments on the terrace while studying the menu at leisure and making their choice of fish from the chill display. The change of mood and menu is a realisation that Essence should focus on what it and its chefs do best; that is, serving some of the finest seafood in one of the island's most spectacular settings.

"Essence's mission is to be innovative, yet always sensitive to the raw ingredients, and to serve consistently good food; season in, season out. Its chefs have a sixth sense for how to treat fish and seafood subtly so that dishes appear deceptively pure and simple, yet present the palate with a twist that lifts them to a higher plane," group sales marketing manager Sue Falzon, said.
