A fresh and healthy lunch can boost your concentration. Here are some recipes to feed your academic success: they’re so quick to prepare that you won’t be late for your early morning lecture.

Sandwich fillers

No more boring sandwich fillers. With a little bit of creativity, you can come up with a different sandwich filler every day.

One favourite is cheesy apple slaw. Just mix some grated hard cheese, grated apple, chopped spring onions, a squeeze of lemon and a little mayonnaise together and you’re ready.

Another quick sandwich filler is cream cheese and roasted red pepper. Cream cheese also goes very well with smoked salmon and chopped parsley. For fish lovers, mix some smoked mackerel fillets with a little mayonnaise and Greek yogurt.

Prawn and corn rosti

You need
1kg potatoes
1 bunch spring onions
175g sweetcorn
200g peeled prawns
Fresh parsley, chopped

Method

Boil the potatoes until tender. Leave to cook and then grate. Chop the spring onions and add to the potatoes. Add the rest of the ingredients to the mixture and shape into cakes. Dust lightly with flour and fry until crisp and golden.

Couscous salad

You need
250g couscous
½ vegetable stock cube
1tbsp butter
240g halloumi cheese
75ml natural yogurt
2tsp harissa paste
200g chickpeas
2 roasted red peppers
50g rocket

Method

Bring 400ml water to the boil. Add the stock cube and butter. Stir until the stock cube has dissolved. Turn off the heat, add the couscous and cover the pan. After 10 minutes, the couscous will have absorbed all the liquid.

In the meantime, slice the halloumi and fry it in some oil. Mix the yogurt and harissa. Drain the chickpeas and fry the peppers.

Fluff up the couscous with a fork. Mix in the chickpeas, ­peppers, rocket and halloumi slices. Drizzle over the yogurt dressing.

Pasta Salad

You need
85g pasta
20g frozen peas
20g sweetcorn
1tbsp yogurt
1tbsp balsamic dressing
1tsp mayonnaise

Method

Cook the pasta in boiling water. Drain and leave to cool. In the meantime, boil the frozen peas and sweetcorn, drain and rinse in cold water.

Add to the pasta. Mix the natural yogurt, balsamic dressing and mayonnaise. Stir in the pasta. If you want, you can also add some chopped cherry tomatoes and basil for added taste.
