Expecting guests? Here’s a fast, fun and tasty alternative to prawn cocktail that looks impressive, and tastes even better.

Ingredients

Serves four

For the dressing
1/2 cup mayonnaise
3 tbsp ketchup
2 tbsp sweet chilli and garlic sauce
1 tsp Worcestershire sauce
A dash of Tabasco

For the garnish
8 cherry tomatoes
1 red pepper
1 medium onion
About 1/2 of a head of iceberglettuce
2 handfuls of rocket leaves
About five Golden Foods Southern Fried Chicken Strips per person

Method

Heat up the chicken strips in the oven, until they take on a rich golden colour. You can prepare the dressing and the rest of the presentation while the strips cook, but keep an eye out for them because they will be ready in just a few minutes.

Combine the dressing ingredients in a bowl. Take out four serving glasses. Now, traditionally, the dressing goes on top of the salad, not under it. However, if you don’t fancy having a soggy salad, start by carefully laying the dressing down at the bottom of each glass – you’ll still be able to dip into it afterserving.

Cut some strips of lettuce (from the sturdier outer leaves) and lay them down on the dressing. Dice the pepper and drop a layer on top of the lettuce.

Shred some more of the lettuce (ideally from the softer core) and fill in the glass with a generous layer.

Sprinkle some chopped rocket. Slice the onion into thin rings, and place them above the rocket.

Cut the cherry tomatoes in half, and put them face down above the onion.

By now, the smell of the chicken in the oven should be to die for.  Take the strips out, let them cool down for a minute, and crown the glasses with a few strips each. Enjoy!
