(Serves 4-6)

This is a perfect dish to cook when roasting a chicken.

Extra virgin olive oil
12-18 asparagus spears, trimmed
1 kg new potatoes, scrubbed
Gozo sea salt
Freshly ground black pepper

Pour some olive oil into a roasting tin, and in it roll the asparagus and potatoes. Roast them in the top half of the oven at 180°C for an hour or so, moving the vegetables to a lower shelf before they show any signs of burning, although by the time they are served, they should be nicely browned in places. Season the vegetables lightly before serving.
