(Makes 12)

350g self-raising flour sifted with a pinch of salt
75 to 100g butter, chilled and diced
About 150ml soured milk

Rub the flour and fat together in a bowl. Stir in enough liquid to make a soft, pliable dough. Transfer to a floured board, and knead it lightly. Roll the dough out to about 2 cm thick and cut out scones. Place together on a lightly greased baking sheet, just touching, but not squashed together. Bake at 200˚C /400˚F, gas mark 6 in a preheated oven for 15 to 20 minutes. Cool on a wire rack and serve warm.
