This simple pasta is good either hot or cold served with a spoonful of sour cream or crème fraîche.

400 g pasta spirals or twists
4 tbsps extra virgin olive oil
1 tbsp lemon juice
½ tsp sugar
Salt and pepper
200 g pack smoked salmon, torn into strips
4 plum tomatoes, deseeded and diced
2 spring onions, thinly sliced
Large handful rocket
Ground black pepper

Cook the pasta in boiling salted water, and while it’s cooking whisk together the oil, lemon juice, sugar and some salt and pepper.

Drain the pasta, return it to the pan and add the dressing, smoked salmon, tomatoes and onions. Toss it all together, then stir through the rocket. Divide between four warm bowls and sprinkle with ground black pepper.

If serving cold, tip the pasta into a colander and rinse under cold water, drain well, then stir in the rest of the ingredients. (Serves 4)
