(Serves 2)
2 heaped tablespoons rolled oats or porridge oats
4 tablespoons skimmed milk or fruit juice
150 g carton plain yoghurt
1 apple
6 soaked prunes
6 soaked apricots
Handful of nuts and seeds, including chopped almonds, ground linseed and pumpkin seeds
Soak the oatmeal in liquid while you grate the apple and chop the dried fruit. Mix the oats, fruit and yoghurt, divide between two bowls and top with the nuts and seeds before serving. You can prepare most of this the night before, including soaking the oatmeal, but the apple is best freshly grated.
