Chef Michael Cauchi is highly regarded locally. His famed restaurant Il Re Del Pesce is still spoken of in revered tones in foodie circles, and he has served his fare to many a dignitary, including presidents and prime ministers of Malta and Italy, celebrities such as Madonna and Roger Moore, and celebrity chef Ainsley Harriot.
Michael’s cooking is delicate, respectful of tradition, and uses the highest quality ingredients. Additionally Michael is a firm believer that his culinary skills are best used when they blend Mediterranean flavours into easily digestible dishes that are as kind to your waistline as they are to your palate. As for the building, it is known as the L’Hostel De Verdelin, after Fra Jean Jacques De Verdelin, a nephew of Grandmaster De Verdalle. It took 12 years to construct, and is excellently preserved in all respects – a veritable treasure trove of history.
