Rickshaw chefs from Budapest and Prague travelled to Malta to work with the Corinthia Palace Hotel Rickshaw team to develop signature dishes for inclusion on the restaurant chain’s cohesive, international menu.

The popular oriental Rickshaw restaurant at the Corinthia Palace Hotel in Attard actually has three other international outlets – in Sudan, Prague and Budapest. These restaurants were opened to serve the Corinthia Group’s discerning clients in other parts of the world following the success of the Rickshaw in Malta. They have quickly become as popular as the local one.

“The Rickshaw has really earned its place as a very popular oriental restaurant in all countries where it is operational,” says the Corinthia Palace Hotel & Spa’s executive chef, Stefan Hogan. “This inspired the teams to take things to the next level, and work together to create dishes that can be sampled in all four restaurants.”

Thanom Phosri from Rickshaw Prague, Zhijun Yang from Rickshaw Budapest and Chunjiang Xi, who leads Rickshaw Malta, honed in on the different cooking techniques being used across the three kitchens. Using their experience and expertise, as well as their knowledge of the Rickshaw patrons’ tastes, they each created six new dishes, which will now be considered for inclusion in the cohesive Rickshaw menu.

“As Rickshaw continues its international journey we are all eager to achieve something that is so much more than just the same name on the door. We want Rickshaw to have a common story and concept. Moving forward, it will be exciting to see which of these dishes will make it to the menus and how our customers react to their introduction,” Stefan says.
