The Bailliage National de Malte, the local branch of the international gastronomic organisation Confrérie de la Chaîne des Rôtisseurs, held a gala dinner at the Corinthia Palace Hotel & Spa, San Anton, in honour of St Nicholas, its patron saint, to close their dinner calendar for the year.

The Chaîne society originally appeared in a list of guilds prepared in 1248 by command of Louis IX of France (later to become St Louis). In 1601, Louis XII granted the guild the Royal Charter and its own coat of arms. Over the centuries, the Confrérie or the brotherhood of the ‘Roaster’, cultivated and developed culinary art and high standards of professionalism and quality befitting the splendour of the Royal Table. The guild system was disbanded in 1793 during the French Revolution and reconstituted again in 1950.

The dinner was well attended and included a number of overseas members and guests.

The Malta Bailliage is part of a much larger dynamic international community of over 25,000 professional and non-professional members in some 70 countries.

It is very active in promoting local culinary excellence and encourages young chefs through its Young Chef of the Year competition project.

Establishments, which include professionals of the table, hoteliers and professionals of the wine industry, who are members of the Chaîne, are recognised worldwide by being included in the official list of Chaîne establishments.
