Apple and berry mulled wine

You need
2 bottles red wine
1lt apple juice
115g caster sugar
1 cinnamon stick
2 star anise
3tbsp Cointreau
Handful of mixed berries
3 small apples, sliced

Method

Pour the wine and apple juice into a large saucepan. Add the sugar, cinnamon stick and star anise. Heat gently until the sugar has dissolved. Stir and continue heating for 15 minutes.

Before serving, add the Cointreau, berries and apple slices.

Eggnog

You need
50g golden caster sugar
4 egg yolks
1tsp vanilla essence
1 can condensed milk
100ml brandy

Method

Put the sugar in a saucepan with 75ml water. Simmer until the sugar has dissolved. Leave to cool and then chill.

Beat the egg yolks with the vanilla. Add the condensed milk, brandy and sugar syrup. Mix well and pour in a jug. Chill for two hours and serve.

Coconut hot chocolate

You need
150ml whole milk
25g white chocolate, chopped
25ml coconut-flavoured rum
1tsp dark chocolate, grated
1tsp coconut flakes, toasted

Method

Pour the milk into a saucepan and simmer over a medium heat. Remove the pan from the heat, add the white chocolate and stir until it melts. Place the pan back on the heat, add the coconut-flavoured rum and pour into a mug. Garnish with the dark chocolate and coconut flakes.
