Kick off this Father’s Day to a good start with eggs, toast and bacon on the grill or maybe the perfect burger that’s sure to spoil the man of the house.

Not sure how to make eggs on the grill? It’s easy. Crack an egg into a cut-out hole in a thick bun set on a cedar plank, then sprinkle with a little cheddar and some spices to add that extra bit of flavour.

Candied grilled bacon

• Ingredients
6 slices back bacon
3 tablespoons honey
2 teaspoons ground cinnamon

• Method

Arrange the bacon slices in single layer on a bacon grilling rack or shallow disposable foil pan. Grill over medium-high heat 10 to 12 minutes or until the bacon edges begin to curl. Remove pan from grill. Drain drippings.

Microwave honey and cinnamon in small microwavable bowl on high 30 seconds, stirring after 15 seconds. Brush bacon with honey mixture. Place bacon directly on grill over low heat. Grill for two to three minutes per side or until crisp.

Egg in bread basket

• Ingredients
4 slices thick bread, such as ftira
7 eggs, divided
2 tablespoons milk
2 tablespoons apple sauce
1/2 cup grated smoked Cheddar cheese

Method

Remove centres of each slice of bread with a round cookie cutter. Beat three eggs with milk and two tablespoons of the apple sauce in medium bowl until well blended. Dip bread in egg mixture. Place on grills. Break an egg into each of holes. Sprinkle eggs with remaining apple sauce. Cover grill. Grill for 10 minutes. Sprinkle eggs with cheese. Grill, covered, 10 minutes longer.

Homemade burger with grilled avocado

• Ingredients
Lime Mayonnaise:
1/4 cup mayonnaise
1 tablespoon lime juice

Stuffed Avocado:
2 ripe avocados
1/4 cup crumbled Cotija cheese
1/4 cup diced tomato

Burgers:
1 pound 80 per cent lean ground beef
2 tspns marinade of choice
4 panini
1 small red onion, thinly sliced

• Method

For lime mayonnaise, mix mayonnaise, lime juice and one teaspoon of the marinade mix in small bowl until well blended. Cover. Refrigerate until ready to serve. For stuffed avocado, halve and seed avocados. Carefully remove peel, leaving each half intact. Lightly season with salt and pepper. Mix cheese and tomato. Set aside. For burgers, mix ground beef and remaining marinade mix until well blended. Shape into four patties. Grill over medium heat for four to six minutes on each side or until burgers are cooked through (internal temperature of 160ºF). Grill avocado halves, cut-sides down, 30 seconds. Turn over avocadoes. Place two tablespoons of cheese mixture into each avocado half. Drizzle with hot sauce, if desired. Grill for four to five minutes. Toast rolls on grill, open-side down, about 30 seconds.

Serve burgers on panini, topped with stuffed avocados and onion slices. Press roll gently to flatten stuffed avocado. Serve with lime mayonnaise.
