Sweet and savoury irkotta dishes ruled the day at Kirkop today, during the annual Irkotta fest.
The festival, organised by the council in collaboration with the Culture Permanent Secretariat and the Malta Tourism Authority, aims to raise awareness about the traditional way irkotta is made.
Until a couple of decades ago, many Kirkop residents earned their living producing irkotta.
Maltese irkotta is not the same as ricotta, in that while ricotta is made from re-cooking the by-product that results from cheese production, whey, irkotta is made from whole milk heated in seawater.
