Christmas is now just around the corner and you can already notice some supermarkets stocking that deliciously weird fruit; the cranberry. Even though it is not native to Malta, every year, around Christmas it magically appears, and what better way to celebrate such a healthy fruit than by incorporating it into some fresh bakes? 

Cranberry, walnut and orange bread

This is a super easy recipe which is perfect with a cup of warm tea/coffee/chocolate. You’ll need:

  • 250g all-purpose flour
  • 200g granulated sugar
  • 250g fresh cranberries, roughly chopped
  • 100g walnuts, chopped
  • 150ml orange juice
  • 60g butter
  • 1 large egg, beaten
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt

Preheat the oven at gas mark 4 (180 degrees celsius)

Add the flour, sugar, baking powder, baking soda and the salt in a large bowl. Cut the softened butter into the mixture and combine with your fingers until crumbly. 

Mix in the egg and the orange juice until all is combined and finally add the cranberries and the walnuts. 

Grease a 22cm X 12cm and add the batter. Cook for around 1 hour to 1 hour 15 minutes until the top is a nice golden brown colour and a knife inserted in the middle comes out clean. 

Once out of the oven, leave it to cool on a wire rack and enjoy for the next 5 days (or until it’s finished).
