Ingredients
500g ground pure almond
300g icing sugar
100g castor sugar
4 egg whites
1 lemon
2 tsps honey
Vanilla

Method

Heat the oven to 180ºC.

Mix the almond and sugar well until integrated.

Grate the lemon zest and mix with the almonds.

Add vanilla, honey and egg whites.

Mix well into a dough, then let it rest for 45 minutes covered with a wet cloth or shrink-wrap.

Take part of the dough and work into a tick sausage. Cut pieces approximately 35-40g. Give these various shapes like balls, cylinders, etc.

Put an oven paper on a baking sheet. Put these shapes on the baking sheet, not too close to each other.

Cook only for 10 minutes. Remove from the oven and let them cool.
