Ingredients
3 eggs
1 tbsp butter
80g lobster meat
25g cheddar cheese
1 small onion, chopped
1 garlic clove
1 tsp parsley, chopped
1 tsp mustard
Salt and pepper

Method

Preheat the oven to 250°C. Finely chop the onions and sauté in a little butter. Once onions are almost clear, crush the garlic and stir in, then remove from heat. In a large bowl, beat the eggs, thoroughly stir in the lobster meat and add the cheddar cheese. Mix everything together.

Pour into a nine-inch pastry case. Bake for 35 minutes and leave the quiche to rest. Allow to cool for 10 minutes before slicing.
