Ingredients
150g thinly sliced pork loin

For the filling
50g minced pork
10g bacon, chopped
50g finely chopped peppers, onions, garlic, apple, raisins
2g coriander seeds, crushed

Method

Prepare the filling by putting all ingredients together in a bowl and mix well.

Place the pork loin flat on a clean surface, season and put a spoon of the filling at one end. Roll and place in a refrigerator to set.

When set, take a hot pan, sear the pork on all sides and finish in a hot oven for approximately 10 minutes or until cooked. Leave to rest and carve in half to serve.

Add some sour cream to taste, tomato salsa and some micro leaves to garnish.
