Enjoying spectacular views, Country Terrace Restaurant in Mġarr, Gozo, offers a range of mouth-watering dishes, using the finest and freshest ingredients. Here is a recipe by chef patron Joseph Mercieca.

Spaghetti with sea urchins

(Serves 4)

800g spaghetti
8-10 cloves garlic, sliced
1 tbsp extra virgin olive oil
6 tomatoes, diced
½ cup lobster bisque, preferably fresh
½ cup boiling water
200g sea urchins
Pinch dill
1 tbsp fresh parsley

Boil pasta al dente for six to seven minutes. In a separate pot fry crushed garlic cloves in extra virgin olive oil, add finely diced tomatoes and cook for three minutes.

Add the boiling water and lobster bisque and cook for five minutes.

Stir in the pasta and add the sea urchins. Garnish with dill and parsley.
