Ingredients
For the fritters
70g self-raising flour
1 whole egg
250g white bait
½ finely chopped capsicum
salt/pepper
For the fine salad
1 green apple, finely shredded
Rucola salad or mixed salad
½ large red onion, finely sliced
½ tbsp lemon juice
½ tbsp sugar
½ tbsp olive oil
For the fried white bait
125g silver fish
300g plain flour
Black pepper/pepper (optional)
Oil for deep-frying
Method
For the fritters
Mix the egg and white bait together with the self-raising flour, add the capsicums and season.
For the fine salad
Toss all the salad ingredients together. Mix together the lemon juice, sugar and oil to form dressing. Dress salad with dressing.
For the fried white bait
Season the white bait (adding pepper is optional). Dust the silver fish with flour. Shake off excess flour and fry in boiling oil. Remove when they turn golden brown.
