Serves 4

Ingredients
400g tagliatelle
800g peeled fresh tomatoes
600g fresh calamari
50g tomato paste
garlic
extra virgin olive oil
fresh basil
salt and fresh ground pepper
small glass white wine

Method

Prepare a large pan with lots of water, salt and oil. When the water boils add the pasta, mix well and cook to your liking. Strain.

Peel and chop the garlic. Wash clean, and cut calamari into rings. Chop the peeled tomatoes into cubes.

Heat some oil, lightly cook the garlic and the calamari for about eight minutes. Add tomato paste, tomatoes and wine. Season, add basil, simmer and cook for a further 25 minutes.

Add to the pasta, mix well and serve hot.
