Ingredients
1 chicken breast, cut into strips
1½ tbsps fish sauce
1 tsp chilli powder
2 fresh chilli, thinly sliced
2 tbsps lemon juice
1½ shallots, thinly sliced
Half cup sweet peppers, chopped
Half cup mint leaves
2 red onions, sliced
1 lettuce, chopped
2 carrots, sliced
1 cucumber, sliced

Method

Pan-fry the chicken breast with some rosemary for eight minutes, remove from heat and allow to cool. Cut the chicken into strips, add the fish sauce to the pan and simmer together with the chicken until the sauce thickens. Allow to cool.

In a mixing bowl, combine the sauce with the chicken strips, chilli powder, fresh chilli, lemon juice, shallots, sweet peppers, mint leaves, red onions, carrots and cucumber.

Toss well and serve with fresh mint on top.
