Serves four

Ingredients
400g fillet of beef
10g sage
15g rosemary
15g thyme
10g rock salt
10g crusted peppercorns
10g aragula leaves
5g oven diced tomatoes
2 chopped basil leaves
2 tbsp extra virgin olive oil
1 crostini
1 tbsp balsamic vinegar

Method

Mix together the sage, rosemary, thyme, rock salt and peppercorns. When the mixture is ready, place them on a chopping board and roll the beef on the herbs.

Sear the beef from all sides for three minutes and leave to cool. Roll the beef with cling film and put in a refrigerator.

Slice the beef and place round the plate.

Put the marinated aragula leaves in the centre of the plate. Drizzle the beef with balsamic vinegar and olive oil. Serve with some parmesan shavings on the leaves.
