Serves two

Ingredients
150g beef
1 tsp cornflour
1 egg
30g green pepper
50g carrots
30g onions
2g salt
4g sugar
20g oyster sauce
10g soya sauce
1 litre vegetable oil

Method

Cut the beef into small, thin pieces and mix with the cornflour and egg. Add salt, sugar, a few drops of oil and set aside for 10 minutes.

Meanwhile, soak some cornflour in half a cup of water for 10 minutes.

Heat the oil to 60°C in a wok (or pan), add the beef and cook for one minute. Remove the meat and set aside.

Heat a few more drops of oil, add the onions, green pepper, carrots, sugar, salt, oyster sauce and a cup of water and cook for two minutes until the water evaporates. Put the soaked cornflour and the beef mix together in the wok and cook for another minute.

Serve hot.
