Baked sardines with mint and cider

4 or 6 sardines, depending on size
75 ml dry cider
Gozo sea salt
Freshly ground black pepper
1 tbsp fresh mint, finely chopped
3 tbsps fresh breadcrumbs
2 tbsps extra virgin olive oil
Lemon wedges
Fresh mint or flat parsley for garnish
Have the fishmonger scale, gut and remove the head from the sardines. Arrange them in an oiled baking dish. Pour on the cider and season lightly.
Mix the mint with breadcrumbs, spoon over the fish and press down, and sprinkle on the olive oil. Bake in a preheated oven at 190°C for 10 minutes. Serve with lemon wedges and decorate with fresh mint leaves, or flat-leaf parsley.
