60 g sugar

250 ml carton cream
2 tbsps orange liqueur or sweet white wine

Reserve six whole strawberries for decoration, then hull and slice the rest, put them into a bowl and sprinkle with one tablespoon of the sugar.

Using a zester, pare off and reserve a few strips of the orange zest for decoration, then finely grate the rest. Cut the orange in half, squeeze the juice of one half over the strawberries and give them a gentle stir.

Put the cream into a bowl, add the remaining sugar, the grated orange rind and the juice from the remaining half of the orange. Stir in the liqueur and, using an electric whisk, beat it all together until thick but not stiff.

Divide the strawberries between six wine or sundae glasses, then top with the syllabub. Decorate each glass with a whole strawberry, sprinkle with strips of orange zest and chill until ready to serve. (Serves 6)
