Four chefs from Kitchen Concepts restaurants recently went on a trip to Italy to get first-hand information on food techniques and marketing in various companies and restaurants.

The group was led by Julian Sammut, managing director of the company, who spent two days showing the chefs around food markets at Testaccio and Trionfale and the celebrated deli shops of the Italian capital: Volpetti, Franchi and Castroni, where they were treated to various meals and local delicacies.

The group also visited Padua, where the chefs attended an informative full-day session in meat selection, ageing and butchery at the Centro Carni Company, a highly respected meat supplier to shops and major hotel chains in Italy and overseas.
