The Institution of Tourism Studies last week opened a new restaurant, The Vaults, at its cellars at St George’s Bay, St Julian’s.

The restaurant has an open-kitchen concept, offering a fusion of Mediterranean, Asian and Far Eastern cuisine. The menu features an à la carte style, with dishes freshly cooked to order and meticulously prepared by advanced level students, helped by their lecturers, Jesmond Atkins and James Attard.

Apart from the elaborate menu, specialities will also be served occasionally, while being served by the students themselves under the guidance of lecturer Claude Scicluna.

During a recent soft launch, ITS executive director Adrian Mamo said: “This is another important step for the Institution of Tourism Studies. Our aim is to give students a broader and higher standard of exposure and training in food preparation and beverage service.”

The Vaults is open for dinner on Thursdays and Fridays.
