Working as a professional chef... on a yacht
Interview with Kurt Scicluna
See what it’s like to work as a professional chef… on a yacht!
Kurt has invited the Zone to his current place of occupation – a luxurious yacht cruising around the Mediterranean.
Hear Kurt’s story, why he has chosen this job, and where he plans to sail off later on in life.
For the Zone team, Kurt cooked pork with apples and cider on a bed of spinach.
For those interested in trying the delicious meal, here is Kurt's recipe:
Cook-fry lean pork meat in butter with some chopped apples.
Add apple cider (about a regular size can) along with the fried pork into a pan and cook in the oven on a low heat, leaving the apple cider to simmer and reduce.
When the pork is ready, thicken the sauce with some crème fraîche and serve on a bed of spinach.

A long long time ago , the best goalkeeper of the Vittoriosa football team took a technician's post with the local MaltaCom where his own experienced father worked and together they made a great team. Some telephone lines had not been working for years as no one could find this intermittent fault and this young man decided to tackle the problem and after a month of hard work he corracted the fault. NO ONE THANKED HIM.
The next day he walked over to Forth St Angelo to the Naval recruitment office and when the officer behind the counter saw his elelctrical qualifications he offered the job in telephony straight away. This yong man refused the offer and told the officer that he wanted to be a cook! The man was bewildered and accepted the young man's wish telling him that he chose the wrong career.
Years later this young man Muliett( I just remembered) made it to a chief cook with the highers Admirals in the Royal Navy and he often told me about how the Admirals often thanked him in addition with other Admirals of other fleets who sailed the meditteranian. Being a cook dealing with Admirals is better than being a chief engineer dealing with engines. That was life and still is like that.
I remember Mr Muliett telling me," I worked so hard in silence solving major faults in the Maltese telelphone company and no one ever thanked me and with the Royal Navy as the Captain's Cook all the high Naval Brass, asked for him and he had to attend the dining room to receives thanks from all the Captain's guests.
Once he made a whole destroyer " the Surprise" all out of choclate and all on board gave him such a Prosit.
Incidentally one man from Vittoriosa " Il BUlly" was selected by one British Admiral to accompany him with his Maltese traditional Daghjsa which he used from ship to shore and " Il Bully " once told me that when they anchored in Venice all the Gondola builder came to see his Maltese Daghjsa all shining with copper embelishments and all admitted thet the Maltese Daghjsa is pretier and more elelgant than the Gondola in Vennice, which after all is a square bottom hull. Being clever in life is not only getting a school education is it?
