3 large ripe mangoes
3 tbsps rum – optional
Light muscovado sugar – to taste
400g double cream or thick custard
2 or 3 tbsps toasted flaked almonds

Peel the mangoes and pare off six thin slivers for garnish. Roughly chop the fruit and blend or process until smooth, with rum if you like, and sugar if necessary. You might find a dash of freshly squeezed lime or lemon intensifies the mango flavour.

Fold the whipped cream or custard into the mango puree and spoon into wine glasses. Chill until required and serve topped with the slivers of mango and toasted flaked almonds.
