8 x 175-200 g pieces salmon
Melted butter or olive oil
Gozo sea salt
Freshly ground black pepper
Grated zest of a lemon and its juice
1 tbsp mild curry paste, such as korma

Brush the fish all over with butter or oil. Season it lightly. Put the lemon juice and zest in a bowl and mix in the curry paste.

Rub this mixture into the fish and place, skin side up on a buttered baking sheet. Leave for 10 minutes, then place in a pre-heated oven at 220˚C, gas mark 7 for five to 10 minutes, or until done to your liking.

If the fillets are of uneven thickness, you may wish to remove the thinner ones first.

This is very good served with a carrot and mango salad, garnished with toasted flaked almonds and sultanas.
