4 slices each white, wholemeal and multi-grain bread
2 small eggs, hardboiled
2 dessert-spoons mayonnaise
Half tsp Dijon mustard
Ground black pepper
Handful small rocket
4 slices smoked salmon
Some very thin slices of hothouse cucumber
200 g tub Philadelphia cream cheese with herbs
4 slices Parma ham.
A few mixed salad leaves
Butter all the bread slices and trim off the crusts. Chop the hardboiled eggs and mix them with the mayonnaise, mustard and a good grinding of black pepper.
Spread two slices of white bread with the egg, scatter over a few leaves of rocket, top with the remaining white bread and wrap them in clingfilm.
Make two rounds of wholemeal sandwiches, filling them with the smoked salmon, a seasoning of black pepper and the cucumber slices and wrap them in cling.
Spread all the multi-grain slices with cream cheese, cover two of them with the Parma ham and sprinkle with a few mixed salad leaves.
Top them with the remaining slices and wrap in cling.
Chill all the sandwiches in the fridge until ready to serve, then cut them into triangles and arrange them on serving plates.
