1 clove garlic, crushed
Grated rind and juice 1 small lemon
Extra virgin olive oil
Ground black pepper
2 pieces dentiċi fillet, about 200 g each
100 g cherry tomatoes, halved
1 tbsp shredded mint leaves
1 tbsp pine nuts

In a small whisk together the garlic, lemon rind and a tablespoon of the juice with a tablespoon of olive oil and a grind of black pepper.

Put the fish on to a shallow baking tray and pour over the garlic mixture. Cover with cling film and let stand for at least half an hour.

Preheat the oven to 220°C. Toss together the tomatoes, mint and pine nuts with a tablespoon of oil, season with pepper, then scatter the mixture over the fish and bake for about 10 minutes, or until the fish is opaque and flakes easily when tested with the point of a knife. This is nice served on warm plates with sliced new potatoes and zucchini.
