Consumers urged to buy fresh fish and store it well
The risk of food poisoning, particularly from fish, increases in summer because of the accumulation of chemicals in the fish, such as histamine that causes allergy symptoms if the fish is not kept cool or iced during retail.
The Health Inspectorate within the Environmental Health Directorate yesterday encouraged the public to consume local fresh fish and ensure proper storage during retail and at home.
In 2007, 20 people fell victim to eight outbreaks of scrombrotoxicity from improperly stored fish. There were eight other isolated cases of scombroid food poisoning. Four cases of the food borne illness scrombrotoxic were reported last year and the inspectorate did not provide any statistics for this year.
It reminded consumers that fish is fresh when the eyes are clear and bulging, its gills are red or pink and not grey, the scales are intact, there is no evidence of missing scales or patches, the skin is shiny, wet and slightly slimy and the tail is stiff. Fish meat is stiff but elastic (no mark is left when flesh is pressed) and has a pleasant smell of seaweed and sea.
Consumers should ensure fish is covered with ice, that the seller observes basic hygiene rules, that anyone handling cash in a food business is not handling food too, that one washes one’s hands before handling food, that flies are kept under control, knives are kept clean and that the worktop and tray where fish is handled are of a material that can be cleaned.
The Health Inspectorate advised consumers to head directly home after buying food products that required cold temperatures and ensure these are placed in a refrigerator or freezer immediately on arrival. They should also keep a small cooler handy where to keep such products, store fish separate from other products such as soap and buy such food products last.

During Santana concert in Malta last month, one of the barmen used his bare hands to throw a fistful of ice-cubes in the disposable cup, then I handed him the money and he gave me small change with the same hand! How utterly professional! I was disgusted! If he didn't have the proper utensils at hand, he could have used the same cup to scoop up ice with. I would have preferred that, rather than having all sorts of germs swimming in my drink!

Health inspectors should go round the many supermarkets we have early in the morning at about 10.
I have noticed more than once that food in the freezer section will be soft at that time. This means that freezers are being switched off at night.

Why not the authorities have a look at Marsaxlokk market for this problems some sea food will have been defrozen and frozen until sold.

I noticed that many a time in food outlets that the person preparing/serving the food also handles the cash. Can you imagine the bacteria of handling (dirty) money and then this same person prepares you a food item. Or even worse, you see some persons who cook your food having a smoke during thier break (which in itself is nothing wrong to have a break) but then they proceed with preparing food without even washing thier hands before touching the food - surely the smell of tobacco does not go well with the taste of food. Manyt times I just refused buying the food item after it has been prepared either with somebody touching the money beforehand or smoking. Why do these establishments have certificates of hygiene plastered all over thier walls then they cannot perform basic hygiene standards?

Answer to Mr Morgan: Because not enough checks are done therefore any wrongdoings are not noticed.
Several times I have noticed food handlers not doing their job well - why? because they don't have any idea how and this is not only seen in the small take aways but also in larger restaurants

May I suggest to report immediatly the food outlet. We will not improve if we just gemgem only. Be proactive.
