Cherry Dot Cornflake Cookies

The cherries on each will tempt kids and the cornflakes make sure they get some nutrition from their holiday food.

Ingredients:

2 1/4 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

3/4 cup butter, softened

1 cup sugar

2 eggs

2 tablespoons fat-free milk

1 teaspoon vanilla

1/3 cup finely chopped maraschino cherries

1 1/2 cups cornflakes

15 maraschino cherries

Directions:

In mixing bowl, stir together flour, baking powder and salt. Set aside.

In a large electric mixer bowl, beat margarine and sugar until light and fluffy. Add eggs. Beat well. Stir in milk and vanilla. Add flour mixture, combining thoroughly. Stir in the 1/3 cup cherries.

Portion dough using level tablespoon. Shape into balls. Roll in crushed cornflakes. Place about 2-inches apart on baking sheets coated with cooking spray. Top each cookie with a cherry pushed in slightly.

4. Bake at 180°C about 10 minutes or until lightly browned. Remove immediately from baking sheets and cool on wire racks. Store in airtight container.

Yields about 5 dozen cookies

Red Snow Sugar Cookies

Make coloured sugar to sprinkle on the cookies to make “red snow” for your little elves.

Ingredients:

1 1/2 cups sifted powdered sugar

1 cup butter

1 egg

1 tsp vanilla extract

1/2 tsp almond extract

2 1/2 cups all purpose flour

1 tsp soda

1 tsp cream of tartar

Red coloured sugar (recipe follows)

Directions:

Mix sugar and butter. Add egg and flavourings and mix thoroughly.

Measure flour and sift with dry ingredients and blend into butter mixture, mixing well.

Refrigerate the dough for two to three hours. When ready to bake, divide dough in half and roll out to 3/16 inch thick on lightly floured pastry cloth.

Cut out cookies with floured round cookie cutter.

Place on a lightly greased baking sheet and sprinkle cookies with powdered colored red sugar.

5. Bake in preheated 180°C oven for about 10-15 minutes or till done. Let cool on a rack.

Make your own coloured sugar

You can use store-brought sugar to sprinkle on the cookies but it is also very easy and inexpensive to make your own. And you can keep in stored in jars for months.

Ingredients:

1 cup powdered sugar

2 drops red (or any colour) liquid food colour

Directions:

Put regular sugar into a blender to make powdered sugar. Place powdered sugar into a jar with a tight fitting lid. Drip the food colouring onto the sugar, close the lid, and shake vigorously for about one minute.

Adjust colour with additional food colouring and repeat if the colour is too light.
